'Scotch' is a protected status granted only to whisky distilled in Scotland and matured there for at least three years in oak casks. The first known written mention of Scotch whisky is in the Exchequer Rolls of Scotland of 1494. All Scotch whisky was originally made from malted barley but commercial distilleries began introducing whisky made from wheat and rye in the late 18th century. Scotch is traditionally drunk neat or over ice, but in more recent years has been introduced into cocktails and other mixed drinks.
