Brill
The only instance of this fish on London’s street signs, Brill Place is just to the west of St. Pancras Station. Named after the former Brill Row in the area, itself named after an inn called The Brill House, extant from the mid 1750s. By 1795, the local streets were fully laid out and the area became a Sunday market called ‘The Brill’.

The brill is a food fish known for their mild, sweet, white, and flaky flesh, which is ideal for grilling, baking, and frying. The bones are good for stock, and it is itself often cooked off the bone.
