Olives

The fruit of the olive tree, about 80% of all harvested olives are turned into oil, while about 20% are used as table olives having been cured and fermented: fresh olives are naturally very bitter and astringent. Olive oil has variety of culinary uses including frying, marinating, or flavouring food or as a salad dressing.
