Cheddar cheese is the most popular cheese in the UK, accounting for over half of the country’s cheese market. It’s commonality reflecting the fact that it can be known as just ‘Cheddar’ unlike many other cheeses which need the qualifier. Cheddar is a relatively hard, pale-yellow cheese originating from the Somerset village of Cheddar in South West England. Cheddar Gorge nearby, contains a number of caves which provide the ideal humidity and steady temperature for maturing the cheese.
