There are three instances of this freshwater fish on London’s street signs; Grayling Road is in Stoke Newington, Grayling Close is in Canning Town and Grayling Square is in Bethnal Green.

Grayling

Grayling have a delicate, flaky, white flesh with a mild flavour, often described as having a subtle, subtle ‘thyme’ or ‘herbal’ aroma when fresh. They are a versatile food fish, comparable to trout, and are best cooked fresh.
