Pheasant

Pheasant is by far the most well-known and abundant game bird in Britain. The subtle gamey flavour from this bird makes it a tasteful choice for various different dishes, but roasting under bacon or foil, or slow-cooking in a lidded pot are best to retain moisture as it has a tendency to dryness.
